South African food can be summarized in one word: meat. They do like their meat and potatoes, and they are good at cooking it in tasty ways. In South Africa, a barbecue is called a braai, which is short for braaivleis (grill meat). It is traditionally held in a boma, a open circular area around a large fire. The meat is cooked over the boma's central fire or, as shown here, over an adjacent smaller fire.
